My search for exceptional tomatoes eventually led me to Prince Louis Albert de Broglie, le “Prince Jardinier” and to the Conservatoire de la Tomate at his Château de la Bourdaisière in the Loire Valley.

Home to more than 800 varieties, the Conservatoire is one of the world’s most important collections of heirloom tomatoes and a remarkable celebration of biodiversity.

What began as admiration grew into a friendship, rooted in a shared passion for flavour, biodiversity and the beauty of nature.

  My tomato garden

In 2021, I proposed the creation of a tomato garden at Marbella Club, inspired by the spirit of Prince Louis Albert de Broglie’s Conservatoire de la Tomate.

Together with the Marbella Club gardening team, we transformed a section of lawn into a living collection of exceptional tomato varieties grown from seeds selected from my own collection.

In May 2021, the Marbella Club Tomato Garden was born: a place where biodiversity, flavour and beauty came together in one of Europe’s most iconic hotels. It is where I started my Sensorial Tomato Experiences.

From intimate tastings to one of Spain's leading tomato festivals, the experience grew into a celebration of biodiversity, flavour and human connection.

Blind tastings, storytelling and multisensory experiences invited hundreds of visitors to rediscover the tomato with childlike curiosity.

Since 2024, my sensorial experiences have entered a new creative chapter through my collaboration with illusionist and poet Sasha Crespi.

Together, we weave gastronomy, storytelling and magic into immersive experiences where wonder becomes part of the table itself.

MEXICO

  In search of origins

CLIENT: Galería MÜI

PLACE: Puebla, México

Date: Feb 2021

In 2020, a partnership with MÜI Gallery in Puebla gave me the opportunity to travel to Mexico in search of the origins of the tomato and the flavours of pre-Hispanic cuisine.

In exchange for two Tomato Experiences created for the gallery’s clients, I embarked on a journey exploring the cultural roots of one of the world’s most remarkable ingredients.

The project was interrupted by the pandemic, but the story continues. A new journey to Puebla is already planned, reopening a chapter that remains very close to my heart.
